Bar Midland is a small restaurant and bar offering a month set menu that uses exclusively Victorian ingredients with a focus on organic farming, edible weeds, native plants and wild shot meats.
The seven-course menu reflects seasonality and quality of produce. Bar Midland mean it when they say they only use Victorian ingredients; sugar, black pepper, coffee, chocolate; if it is not grown in Victoria, it is not used. Instead, using native and creative substitutes.
The wine list reflects this ethos of being 100 per cent Victorian.
